片鱼片的方法如下:

1,首先要将处理干净的鱼身上的水和粘液用布擦干净,这样片鱼片时才不会滑也不会伤到手;

2,刀打斜角,从鱼尾处下刀向鱼头方向片,片至鱼头处时再竖著下一刀,这样,鱼的一半鱼身就切下来了,按照同样的方法取下另一半鱼身;

3,刀放平,将鱼身平放,带皮的一面朝上,还是从尾部向鱼头方向运刀,片去鱼脊骨;

4,将片去鱼脊骨的鱼身翻过来,使带鱼皮的一面朝下,斜著下刀,沿著鱼翅往下运刀,将整片鱼翅取下来,剩下的就是净鱼肉了,另一半按照同样的方法取下鱼肉;

5,将净鱼肉铺展开,鱼皮朝下,刀与鱼肉成大约30度夹角,从鱼尾处开始片,一片一片将鱼肉片下来。

另外多说一点,鱼肉很嫩,所以片鱼片时要薄厚适中,忌太薄,太薄了容易碎,成菜不成形,既影响美观也影响食欲!


首先是准备一把好刀,找一个平整的案板备用,然后把鱼鳞去除及肚子里的东西里里外外都处理一下清洗干清。下面开始动刀,先把鱼头切掉,然后把鱼身子从脖子到尾部以脊椎骨为中心线切开一分二,取出一片鱼放在平整的案子上,鱼皮一面朝上,脊椎骨这一面向里把鱼放平,刀斜著35度为佳,从尾部住脖子部一片一片的割,切记:刀不能切到底,因为到底就会把鱼刺切断,切的时候从刺上一点滑过就行,断完后,就剩下整个鱼刺的架子了,鱼肉是不带刺的。切的薄厚就看你的基本功了。

以黑鱼酸菜鱼片为例:黑鱼去麟去内脏去腮(建议用剪刀很实用),冲洗干净!把刀磨锋利,把黑鱼垫在抹布上(防滑),用另外一个抹布按住鱼头,从鱼尾顺著中骨往鱼头方向切,把鱼分成两半,再把另一半上的中骨去掉,去头!再去皮!用左手按住鱼肉,右手拿刀,刀刃左倾,刀背右倾,拉切鱼片。这样容易掌握鱼的厚度,大小!均匀好看!
