泰国EAT ME餐厅主厨Tim Butler开设最强海鲜餐厅Esenzi
EAT ME(吃我)餐厅不但年年名列在亚洲50最佳餐厅(Asia’s 50 best restaurants)的名单当中,Chef Tim Butler信手捻来的好厨艺,与对最好食材的坚持,让EAT ME restaurant不但在曼谷屹立十多年,同时该团队还与普吉岛顶级Villa合作,开设了东南亚最受瞩目的海鲜餐厅Esenzi。(内含HD影音介绍)
Chef Tim的烹调哲学是”简单”,但一定要是最好的食材、用最少的调味,去突显食材鲜味。从美国纽约而来、Tim在泰国定居已有九年的时间了,「亚洲多元的食物文化和味道,很明显地已经影响了我的料理,虽然经典的美式口味和菜肴仍在我的manu(菜单)当中,但是你可以明显地发现,有些泰菜的元素已融入其中,譬如辣椒。」
由于EAT ME餐厅在泰国的成功,让东南亚最顶级的Villa” Iniala beach house” 老板亲自邀约Tim及团队到他的普吉岛别墅开设Esenzi,这间以来自世界各地、最新鲜海鲜为主打的餐厅,势必将受到愈来愈多的关注。
「我们在这里玩很多海鲜食材,譬如我们有一个赤贝实验,我们用经典的辣椒、盐、醋来做成泰式酸辣沙拉,采用的是生鱼片等级的蛤。」Tim表示他在Esenzi做了很多海鲜料理的尝试,希望也能将欧洲的顶级海鲜与东方调味做结合。
在被问到最喜欢哪种海鲜时,Tim表示他没有最喜欢的,因为每个时期都会有变化,譬如他最近迷上鲍鱼。特别是在美国加州和澳大利亚的一些区域,有一些很棒的野生鲍鱼,「这不是一般西餐会广泛使用的食材,但这是一个很棒的食材,因为它不仅是多样的,也是可永续生长的,同时对环境的影响非常低。」
Tim同时也是海洋保育的拥护者,譬如他个人绝不使用金枪鱼,「这真的是可怕的,在这个时间点你并不知道在海洋正在遭受甚么样的破坏,我们只知道保育变得更难、谈永续更是难上加难。因此在Esenzi和EatMe餐厅,我们正在积极做正确的事情-海洋保护,真正试图让当地渔民在每个区域尽可能地负责任。」

EAT ME restaurant Head chef Tim Butler, who hails from New York, exhibits genuine creativity in the kitchen, fusing influences from around the world. Dishes are characterised by daring flavour combinations, which showcase a kaleidoscope of international ingredients such as Alaskan scallops with avocado, yuzu and pancetta is one of the most talked about dishes. For sharers, there are large options including Australian wagyu tomahawk that feeds three to four people, and those seeking something different for dessert can try the homemade ice cream.
Set over two floors with a sleek, muted colour scheme, the restaurant houses a bar and a bamboo-shrouded veranda, which is irresistibly romantic at night when illuminated by flickering candlelight. Friendly staff and fabulous cocktails (the fig and ginger martini is a favourite) are further reasons to visit – and help explain why Eat Me is much-loved as a late-night dining destination.
Esenzi features contemporary renditions of classic seafood preparations, successfully fusing great food, service and an exceptional scene as it appeals to the tastes of today’s modern diner.
