朋友你好,常見的紅燒排骨蓋澆飯,是紅燒排骨,再搭配一些青菜。紅燒排骨是比較重要的,下面為朋友介紹一下紅燒排骨的做法,雖然不一定正宗,畢竟每個人心中對「正宗」的定義都不一樣,這個做法也適合各位在家裡做。

用料:排骨、蔥、姜、蒜、鹽、生抽、老抽、料酒、白糖、雞精。

製作步驟:
  1. 排骨斬小塊,沖洗乾淨;*前排的肉質會更嫩

  2. 先放鍋裏氽一遍水,為了去除血水;

  3. 煮開後,用清水衝去浮沫,撈起來瀝幹水份;

  4. 鍋裏熱油,爆香蔥姜蒜;

  5. 倒入排骨,煸炒;

  6. 至排骨兩面焦黃;

  7. 倒入生抽、老抽、料酒翻炒上色後,再倒入熱開水,大概與排骨持平;*生抽:老抽比例為2:1

  8. 加鍋蓋,大火燒開水後轉中小火繼續燒;

  9. 最後至湯汁剩1/4多點,調入一點鹽和白糖,雞精,轉大火收汁即可(前面也可以多放些水,湯汁拌飯也很香呢)。
