Tools:

18cm round baking pan (or 4 10cm small round baking pan),rolling pin, and plastic wrap.

 

Pie crust (Soft crust):

Ingredients:

All purpose flour               200g

Melted unsalted butter     100g
Salt                                     1/4 tea spoon
Water                                 1~2 table spoon
Egg yolk                             1

 

Method:

1. Put all the ingredients into food processor and blend together until it becomes small dough chunks.

2. Pour the dough on the plastic wrap and knead until the dough becomes smooth and integrated.

    form the dough into round shape with 2 cm thick and wrap with plastic wrap.

3. Put into the fridge for 30 mins.

4. Put the dough between two plastic wrap and roll the dough into round shape (3 mm thickness)

5. put the flat dough into baking pan and press it to make sure it covers the baking pan.

6. Remove the extra dough on edge; use fork to poke some small holes on the dough. And it's ready to bake :D Preheat the oven to 180℃(355℉)

7. Put baking paper or tin foil on the dough and press by something heavy on top (ex :baking stone)

8. Put into the oven and bake for 15 mins, remove the tin foil and heavy object, and bake for another 5 mins.

9. Take out the baking pan and brush a layer of egg yolk. (This step can prevent the mixture seek in the crust.

 Stuffing:

Ingredients:

Cooked and chopped spinach                                     40g
Sour cream                                                                   2 tbs
Diced Chicken                                                               40g
Chopped Broccoli                                                          40g
Shredded double cheese or mozzarella cheese        40g
Chopped onion                                                              1/2
Cherry tomato                                                               5
Fresh or dry rosemary                                                  few
Dry Parsley                                                                    few

 

Cream Mixture:

Milk                                                                              50 ml
Heavy cream                                                               50 ml
Egg                                                                               1
Salt and pepper                                                           pinch

 

Method:

1. Mix chopped spinach with sour cream and let it set aside.

2. Pan fry the chicken, onion and broccoli until cooked. Add the rosemary at the end.

3. Put a layer of step1 on the crust and pour the step2 above it. Make sure it cover every part of the pie.

4. Put the cheese on top

5. Mix all the ingredient of cream mixture together.

6. Pour the mixture into the pie slowly and carefully.

5. Slice the tomatoes in half and place it in the pie evenly.

6. Spread parsley on top and bake with 180℃(355℉)for 25~30 mins

7. Set it aside for 10 mins and EAT!!!!!!!!
