片魚片的方法如下:

1,首先要將處理乾淨的魚身上的水和粘液用布擦乾淨,這樣片魚片時才不會滑也不會傷到手;

2,刀打斜角,從魚尾處下刀向魚頭方向片,片至魚頭處時再豎著下一刀,這樣,魚的一半魚身就切下來了,按照同樣的方法取下另一半魚身;

3,刀放平,將魚身平放,帶皮的一面朝上,還是從尾部向魚頭方向運刀,片去魚脊骨;

4,將片去魚脊骨的魚身翻過來,使帶魚皮的一面朝下,斜著下刀,沿著魚翅往下運刀,將整片魚翅取下來,剩下的就是凈魚肉了,另一半按照同樣的方法取下魚肉;

5,將凈魚肉鋪展開,魚皮朝下,刀與魚肉成大約30度夾角,從魚尾處開始片,一片一片將魚肉片下來。

另外多說一點,魚肉很嫩,所以片魚片時要薄厚適中,忌太薄,太薄了容易碎,成菜不成形,既影響美觀也影響食慾!


首先是準備一把好刀,找一個平整的案板備用,然後把魚鱗去除及肚子里的東西里里外外都處理一下清洗干清。下面開始動刀,先把魚頭切掉,然後把魚身子從脖子到尾部以脊椎骨為中心線切開一分二,取出一片魚放在平整的案子上,魚皮一面朝上,脊椎骨這一面向里把魚放平,刀斜著35度為佳,從尾部住脖子部一片一片的割,切記:刀不能切到底,因為到底就會把魚刺切斷,切的時候從刺上一點滑過就行,斷完後,就剩下整個魚刺的架子了,魚肉是不帶刺的。切的薄厚就看你的基本功了。

以黑魚酸菜魚片為例:黑魚去麟去內臟去腮(建議用剪刀很實用),沖洗乾淨!把刀磨鋒利,把黑魚墊在抹布上(防滑),用另外一個抹布按住魚頭,從魚尾順著中骨往魚頭方向切,把魚分成兩半,再把另一半上的中骨去掉,去頭!再去皮!用左手按住魚肉,右手拿刀,刀刃左傾,刀背右傾,拉切魚片。這樣容易掌握魚的厚度,大小!均勻好看!
